2-3 cloves garlic, minced
8 c. (or more) fresh swiss chard, chopped
1 c. diced tomato
Salt and Pepper to taste
1/4 c. low fat cream cheese
4 oz. low fat cheese of choice, shredded
2 T. grated parmesan cheese
6 large eggs, beaten
Mrs. Dash - Table Blend (optional), or herbs of choice


How Do I Make Crustless Swiss Chard and Tomato Quiche?

Here is how you make Crustless Swiss Chard and Tomato Quiche:

Spray pie plate with Pam and set aside.Steam/saute onion and garlic is a bit of water until softened. Add chopped swiss chard and continue to cook, adding a bit more water if needed, until chard cooks down and becomes tender. Drain and spread over bottom of pie plate.Top with diced tomatoes. Salt and pepper if using.Drop bits of cream cheese over top, then shredded cheese and parmesan.Add Mrs. Dash, if using, to beaten eggs and pour over veggie mixture.Bake in 350* oven for 45 min. until lightly browned and eggs are set.This is a very forgiving recipe. You can change up the veggies, the cheeses, spices, and herbs. You can use an egg substitute in place of fresh eggs for a lower fat/cholesterol version.Makes 6 servings, 1/6 of pie per serving.Enjoy!
