Spray a rectangular cooking pan with cooking spray & cover bottom of pan with eggplant.

In a separate bowl mix the following:
2 large Egg, fresh, whole, raw, beaten well
3 serving 1 tsp Parsley Flakes or 1 Tbs
3 serving Basil or 1 Tbs
3 serving Oregano (flakes) or 1 Tbs
1 tsp Marjoram, dried
.5 tsp Pepper, red or cayenne (or more to taste)
440 gram Simple Truth Organic Ricotta Cheese (8 ounces)

6 oz Tomato, grape (3oz = appro 12 tomatoes) Sliced in half

Mix the ricotta and spinach together and spread a layer over the eggplant. Layer mushrooms and tomatoes and eggplant again. Then set another layer of cheese-spinach mixture. Put any mushrooms and tomatoes on top. Cover with a tight tinfoil lid and bake for an hour at 350 degrees.

Ten minutes before the end of baking, add to the top of casserole
2 oz Mozzarella Cheese, part skim milk. Let cook uncovered the last ten minutes.

Let set for 15 minutes or so before cutting into 4 equal pieces.
