Recipe?The ingredients for Veggie-gratin! are: 3 medium potatos, ( I prefer peeled) chopped into small pieces2-3 zucchini, chopped into small pieces 1 onion chopped into small pieces 2 cloves garlic, minced 1/2 cup parmesan cheese 1/2 tbsp-1tbsp oil(olive is healthier of course) Seasoning of your choice--I like garlic and herb, but mexican seasoning would also give it a nice kick How Do I Make Veggie-gratin!?Here is how you make Veggie-gratin!: Preheat oven to 400. If you prefer no skin, peel veggies. Chop all veggies and garlic very small. Toss together in bowl with oil. In another bowl blend spices and parmesan chese. Add cheese mixture to first bowl and toss well until cheese is evenly distributed. Place mixture into foil lined or sprayed cooking dish. Cover with foil and bake for about 15 minutes, then remove foil and let bake for 5 minutes to brown. Cover can be left on if no browning is preferred. Check on dish often as the size of the pieces you chop may require less or more time to finish cooking. Makes 4-6 servings.
