Remove from oven and set aside. Brush a grill pan with remaining olive oil and preheat. Grill eggplant slices over medium high heat until soft, remove from pan to a platter. Continue grilling veggies (onions, tomatoes, and mushrooms) until lightly browned. Place veggies on platter with eggplant. Salt and pepper to taste.To prepare pizzas: Divide tomato sauce into equal portions and spread on the pitas. Sprinkle mozzarella over top of each.
