Here is how you make Garden Veggie Crustless Quiche:

preheat oven to 400. Beat egg and substitute until fluffy. Add 3/4 c cheddar, 3/4 c Monterey, milk flour, baking powder and cottage cheese. Head skillet to mediom high. Coat w/ spray. Add zucchini and potato mix. Saute until vegetables are tender. Add to egg mixture. Pour into 3 qt sprayed casserole. Top with remaining cheeses and tomatoes. Bake 15 minutes at 400.
