2-3 large bell peppers, sliced, or one bag frozen pepper strips
1, 10 oz bag of frozen spinach
1 pkg (8 oz) of your favorite chicken sausage
1 jar of Trader Joe's organic marinara sauce
1 box no-boil lasagna noodles, such as Barilla
1, 15 oz container part-skim ricotta
1, 12 oz container 1 percent fat cottage cheese
1 oz grated fresh parmesan cheese


How Do I Make Double Veggie Lasagna with Sausage?

Here is how you make Double Veggie Lasagna with Sausage:

Heat 1 T olive oil in a large skillet. Brown chopped onion until translucent, then add chopped sausage and cook for 3-4 minutes. Add bell pepper and spinach and cook until spinach thaws and most of the water has evaporated. Add bottle of sauce and simmer.Combine ricotta and cottage cheese and blend in a blender or with a stick blender.Spread one-third of sauce mixture in the bottom of a 9X13 pan. Top with one-half of the noodles and one-half of the cheese mixture. Repeat the layers and top with last third of sauce and 1 oz grated parmesan.Cover with foil and bake at 400 for 30-40 minutes or until bubbly.
