I had to improvise when I saw Chef Meg's Tex-Mex Calzones since I didn't have a lot of what was needed, and this is what I came up with. Making little turnovers with the tortillas was a bit difficult - maybe mine were too dry. I also made some with 10inch whole wheat tortillas quartered - they didn't seal that well, but tasted great. Then I used wonton wraps and rolled them up. They turned out good as well and would make great appetizers. I had meant to add cheese, but forgot it and didn't miss it. Brush on the egg white before closing and press. (about 2 tbsp for the tortillas, and 1 for the wontons) Brush additional egg white on top as it helps them get crispy and brown. Place on a lightly greased baking sheet. The tortillas take about 10-12 minutes in a 400 degree oven while the wontons take 7 minutes. My 13 year old son who doesn't usually eat beans or anything containing them (which is why I crushed them) loved them. I made 4 of the 10 inch quartered, 3 of the 6 inch and 23 of the wontons. Using a different wrap other that te 6 inch tortillas will change the calorie count.
