Makes 4 large servings.VEGGIE PREPPeel zucchini and cube. Cut eggplant into slices. I used 4 small sicilian eggplants. Cut a medium onion into slices.TOFU PREPCut cube in half and then slice 1/2 into triangles. Store the extra 1/2. Combine breadcrumbs and parmesan cheese. Combine milk and egg white. Dip tofu into egg mixture and then into bread crumbs. Place in a pan on medium heat. Turn after 4 minutes.In a glass pan, lay down eggplant and add spices/herbs. Add zucchini then tofu.
