1 small onion, chopped
2 c. cooked red kidney beans
1 Tbsp. chili powder

1/2 tsp. blackstrap molasses
1/2 c. shredded Cheddar cheese
1 c. hot taco sauce
1 1/2 c. shredded lettuce
1/2 c. low-fat, plain yogurt (optional)


How Do I Make Mexican Bean Tacos?

Here is how you make Mexican Bean Tacos:

Heat the taco shells in a 325 degree oven for 5 to 10 minutes.Meanwhile, place the butter in a large skillet, then add the onions. Cook, stirring over medium heat until the onions are translucent and just begin to soften. Add a few drops of water, if necessary, to prevent sticking. Stir in the kidney beans, chili powder, cumin and molasses. Mash the beans with the back of a wooden spoon while cooking. When the beans are mashed and heated through, remove from heat.Place the beans, cheese, taco sauce, lettuce and yogurt in separate dishes on the table.
