2 cans of tuna in olive oil partly drained, but keep enough to help make a spread of the mixture
(if you buy tuna in water, add 1-2 tbs. of olive oil to ingredients. We prefer albacore tuna)
1 large roasted red pepper from a jar, minced (pimentos can be substituted. You can also roast your own)
3-6 small artichoke hearts - canned (about 1/2 can)
1 tbs of dijon mustard
1 tbs lemon
1 tbs of oregano or to taste. Italian herb mix is a good substitute
1-2 tsp ground garlic, or to taste. Eliminate if you do not like garlic.
You can add about 1/8-1/4 cup or more of fresh red onion

1 loaf of ciabatta bread or similar dense chewy bread.

Combined tuna, red pepper, artichoke hearts, mustard, lemon, oregano (or other herbs), and garlic (if using) in bowl and mash together so that it is easy to spead. You c an also drizzle a little olive oil over the bread as a substitute.Add avocado slices on top (calories not included in ingredients) Sprinkle with generous helping of shredded cheese.Sprinkle the whole thing with shredded cheese.Place bread and tuna sandwiches under broiler for 1-2 minutes until cheese has melted.
