5 hot italian sauge/ cut in half
1LB pork or beef shortribs in 2"pieces
ILB ground lean hamburger
1LB ground pork
Brown in 2Tbl Olive oil in batches transfer to Large kettle
DRAIN most of the fat off and ADD:
1 1/2 C large diced onion
5Large cloves Chopped Garlic
Cook 5 min add to pot

ADD:

4 28 0z cans roma tomatos (peeled)
1 12 0z can tomato paste
2Tbl Fresh Oregano (1tbl dried)
1C Fresh chopped Flat Italian Leaf parsley
Zest of 2 Lemons
1 1/2 tsp fresh ground pepper
salt to taste
Pinch red pepper flakes
pinch sugar
2 TBL OLIVE OIL

Simmer for 3.5 hrs. serve w/pasta of choice (RIGATONI)
