1 16 oz package frozen cut okra
1 can 28 oz can crushed tomatoes
1 medium white onion, chopped
3 boneless skinless chicken breasts
Creole seasoning
2 tbsp. olive oil
6 cups cooked white rice
12 Gladware containers

Here is how you make Frozen lunch - jambalaya:

In a dutch oven or heavy pot over medium heat, pour olive oil to coat bottom. Season chicken breasts liberally with creole seasoning. Brown chicken breasts on both sides, cooking chicken through. When you're done, there will be browned seasoning (it might look burnt) at the bottom of the pot. This is good! Use chicken broth to deglaze the pot and scrape up bits to make a dark brown broth. Add crushed tomatoes, ham, kielbasa, okra, and onion. Let chicken cool slightly, then chop into small pieces and add to pot. Let all ingredients simmer about 15 minutes, then add more creole seasoning to taste.Scoop 1/2 cup white rice (I use an ice cream scoop) into each container. Ladle equal portions of the jambalaya (about 10 oz) into each. Freeze.To Reheat: Microwave on high for three minutes. Check to see if fully heated through.
