The ingredients for Double-Stuffed Peppers are:

Tip: Use a large casserole dish for this recipe. Before you get started with the stuffing of the peppers, make sure your casserole dish will hold at least six halved bell peppers. For added flavor, line the bottom of the casserole dish with 2 cups of chopped tomatoes, 2 tablespoons of basil and 1/2 cup of mozarella cheese. Set this casserole dish aside.

For the Stuffed Peppers, you'll need:

3 -6 large bell peppers
To prepare the peppers, blanch them in boiling water for about 1 minute, then put in ice water to stop the cooking process. Once they've cooled off, slice them in half horizontally and take out the seeds and membrane. Arrange them over the tomatoes in the casserole dish.

DELUXE DOUBLE STUFFING

Blend together:

15 oz ricotta cheese
1 egg
8 oz parmesan cheese
1 tbl italian seasoning
1 tsp black pepper
pinch of salt
pinch of red pepper flakes

Spoon about half of this mixture into the hollow green pepper halves filling them up only half way.
Set aside.

Now you'll need to mix together:
1/2 pound of ground beef - cooked, drained of all fat
1 cup of cooked brown or white rice
1 cup of chopped onion
2 small cans of tomate paste
2 tablespoons Italian seasoning
pinch of salt and pepper
pinch of red pepper flakes

Saute these ingredients together until thickened. Fill the peppers to the brim with this mixture. Sprinkle mozarrella cheese over the dish.
Bake uncovered 350 degrees for 40-45 minutes. (Do not allow the cheese to get brown)

Enjoy! These take a little (ok . . a LOT of) preparation but the taste is really worth it! ! By the way, you will probably have left over stuffing for more peppers in the future!
