Here is how you make Mexi-Chicken Skillet:

1. Combine 2 cups water with 1/2 c salsa in a covered medium size saucepan; bring to boil. Add rice, stir, reduce eat to low. Simmer, covered for about 20 mins or until rice is tender.2. Cut chicken into bite size pieces, add to skillet with onion, peppers and garlic. Cook, stirring occasionally.3. While the chicken cooks, drain beans and corn, rinse, drain well. Add to chicken mixture. Add remaining salsa to mixture. Stir until chicken and veggies are coated with sauce. Reduce hit, simmer covered until chicken is cooked through.4. To serve, spoon chicken mixture over rice.
