1 can 16 oz. of kidney beans
1 can 11 oz. of shoepeg corn (Green Giant)
1 can 10 oz. tomato sauce
1 medium onion, chopped
1 pound lean ground beef, browned
1 can RoTel tomatoes and green chilis
1 can RoTel Chili Fixins' (use both cans, 2 total, RoTel Chili Fixins if a spicier chili is desired)
1/2 T. Cumin powder
1 T. Chili Powder (more for a spicier kick)
2 T. fresh Cilantro
Shredded Sharp Cheddar Cheese (optional)
Light Sour Cream (optional, I use Daisy)

Here is how you make Jen's Award Winning Mexican Chili:

Makes 10 1-cup servings, approximatelyBrown the ground beef, then strain to reduce fat further. Rinse all the beans, drain the corn, add the Rotel tomatos undrained, the tomato sauce, the cumin powder, cilantro, chili powder and chopped onion. Cook on stove top over low-medium heat for 30-45 minutes or cook in crock pot on low for most of the day or on high for a couple of hours.Top with shredded sharp cheddar cheese and light sour cream, if desired.
