8 serving Pacific Natural Foods Organic Diced Tomatoes, 1/2 cup
4 cup chicken stock, low sodium
4 cup, pieces or slices Mushrooms, fresh
2 cup, sliced Zucchini
2 serving Large White Onion
1.5 cup Cascadian Farm, Organic Sweet Corn, frozen


How Do I Make New Mexican Chili?

Here is how you make New Mexican Chili:

Add EVOO to large soup pot and heat on medium. Chop onion, add to heated oil and saute til sweating - 3 mins. - Stir occasionally and add garlic, chopped, and fennel bulb chopped. Cook for 2 mins and add chopped green pepper (large cuts.) Turn down and add Yves ground round. Break up the ground round in the pot and add spices. I like to add worchestshire sauce and maybe some steak spice too, with a little bit of sea salt. Stir in spices and add the stock, bring the heat back up to medium. Add black beans (2 cans Organic) and diced tomatos (large can Organic.) Stir together and add frozen organic corn. I used homemade turkey stock in this batch but love the fresh taste of organic veggie stock and mushroom stock, which I did not have on hand. Bring entire batch to boil and let it roll for 5 mins or so. Turn off and leave with lid on to cool but not over cook. Reheat to Serve with homemade corn bread, garnished with fresh chopped cilantro, or with fresh avocado wedges depending on which macro is most needed at the time. Sometimes a squeeze of fresh lime and some corn chips can really freshen the flavour for summer serving. Serving Size:?Makes 8-10 3 cup bowls
