2# boneless, skinless chicken breast, preferably organic or drug/hormone free
1 c frozen shelled edamame (soy beans)
1/2 c grape tomatoes, cut in half
1 small cucumber, peeled, seeded, and chopped in to 1/2" pieces

1/2 extra virgin olive oil
2 oz fresh lemon juice (about 1 1/2 - 2 lemons)
1/4 fresh flat leaf parsley, chopped
1 tsp black pepper
1 tsp sea salt
1/4 c chopped walnuts (optional)

Here is how you make Farro and poached chicken salad:

Cook soaked farro in boiling salted water for 10 to 15 minutes, until al dente. Meanwhile, place chicken in a non stick pan and spray lightly with a natural ingredient cooking spray. Cook chicken for 2 minutes on each side over medium heat then add enough water to almost cover the chicken. Cover the chicken and poach for about 8 to 10 minutes, turning the heat down a bit if necessary, turning 3 or 4 times. Remove chicken and let it rest for 5 minutes. Cut chicken in to 1/2" dice. If any pieces are pink return them to the cooking water and poach for an additional 2-3 minutes. Be sure to not over poach the chicken. Cook edamame according to package directions. Drain and run under cold water. Let cool, you can hasten this by popping them in the fridge.Mix olive oil, lemon juice, salt and pepper in a sealed jar, shaking vigorously until well emulsified.Place, farro, chicken, edamame, tomatoes, cucumber, and olives in a large bowl and toss with olive oil mixture. Add parsley and walnuts and mix. This salad is best after it sits for at least an hour to let the flavors combine. Before serving, let salad sit at room temp for 15 minutes.I also add roasted red peppers but didn't find them on the ingredient list. You can buy them in a jar at the market.
