1.5 lbs Zucchini Sliced in 1/4 inch slices
1 lg Onion Sliced
1 cup Chopped Parsley
1-2 lbs Green Beans (cut or whole)
can use Okra or Eggplant
.5 cup Olive Oil
2 Tblsps Oregano (fresh or dried)
Salt (or substitute) & Pepper

I suggest chopping and slicing everything ahead of time. I made this today and didn't read through instructions...READ them!Chop up tomatoes, mix minced garlic with them and set aside. After chopping and slicing all the vegies, layer 1) potato slices--then sprinkle with salt & pepper, oregano, parsley & olive oil. ( You will do this between each layer of vegies, so save enough to do this) 2) carrots, 3) zucchini, 4) onions, and 5) green beans. Top with remaining tomatoes.Bake in large glass baking dish or Dutch oven. Cover with aluminum foil or lid. Bake for 60 mins at 350 degrees.
