1-2 T minced garlic
2 tsp italian seasoning
3 T extra light olive oil
1 tsp adobo seasoning (can substitute garlic powder and regular salt for this)

Here is how you make Zucchini Tomato pasta:

cook and drain pasta according to directions on package.In seperate frying pan, add 1 T oil and zuchinni. Sautee for about 5 minutes on medium heat. Add onion, garlic, and adobo and sautee for an additional 3 minutes. Add tomatoes and sautee until all veggies are to your desired crunchiness. Sprinkle with italian seasoning and add remaining oil.Dish up pasta into 1 c. portions and divide tomatoe/zuchini mixture and place on top of pasta. Can be served warm or cold.
