1/4 Cup Vegetable Broth
2 stalks Celery, chopped
2 Tbsp Onion, chopped
1 spear of Asparagus, chopped
1 cup Rotel tomatoes
2 Tbsp Barley, presoaked in water to soften, and drained with water reserved.
1/4 to 1/2 cup water


How Do I Make Spicy Vegetables and Barley?

Here is how you make Spicy Vegetables and Barley:

Put the broth in a skillet and heat on medium. Add chopped vegetables. Cook for about 5 minutes then add Rotel tomatoes and drained barley. The mixture should be a bit on the thick side. Heat to a boil then reduce heat and simmer until barley is done. You might need to add water so the barley has enough liquid to cook well. If it's too thick, add some of the barley water or other liquid. If it's too thin, let it simmer longer until some of the liquid is gone.Serving Size:?4 half cup servings
