24 medium mushrooms
8 slices turkey bacon
1 cup minced onions
1/2 cup chopped chile
4 oz. cream cheese
1/4 c. Panko bread crumbs


How Do I Make Stuffed Mushrooms?

Here is how you make Stuffed Mushrooms:

1. Clean mushrooms and remove stems. I like alot of filling in my caps so I used a melon baller to remove a little of the insides of the mushrooms to allow for more stuffing space. 2. Mince stems and save. 3. Slice Turkey bacon into small chunks. Heat a non-stick skillet to medium high add bacon and onions and sautee together until bacon begins to crisp and onions become slightly translucent. Add salt and pepper to taste. 4. Lower heat to medium, add green chile, and minced stems to pan and cook until mushrooms juices have evaporated. 5. Turn off heat and mix in cream cheese until well combined. Let filling cool and transfer to a zip lock bag. Snip corner of bag to pipe into mushroom caps.6. Pipe filling equally into caps then press filling into the bread crumbs. Spray each mushroom top with a bit of olive oil spray.7. Place caps onto a baking dish and add a little water to bottom of pan.
