For those that have never had this before, this is a nice side dish that holds up well to baking or grilling. Will fill you up as a side with a lot of nutrition. I marked as vegetarian because you can exchange the chicken bullion with vegetable. Could even go vegan by omitting the cheese. I listed recommended ingredients, but you can season as you like. I use low sodium bullion, but could not find a listing. The cheese is also optional but helps bind the stuffing.

1 tsp Knorr Chicken Bouillon
1.5 cup (8 fl oz) Water, tap
1 stalk, large (11"-12" long) Celery, raw
.5 cup, chopped Onions, raw

1 clove Garlic
1 dash Pepper, black
.25 cup, shredded Cheddar or Colby Cheese, Low Fat



How Do I Make Stuffed Chayote Squash?

Here is how you make Stuffed Chayote Squash:

1. Cut the squash in half starting with the knife parallel to the split on the stem end.2. There is a seed similar to a pit in the middle that is very thin and looks different than the rest of the meat. Using a spoon, scoop this pit out. 3. Scoop out the squash as well as possible with a sppon, saving the meat. Ideally, leave 1/4" -1/2" wall from the outside. 4. Dice the onion and celery, start to sweat in a pan with a little water.5. Dice the squash meat that was scooped out.6. Pour the desired amount of water into the pan with the onion and celery, add the squash, crushed garlic, bullion, and other seasonings. Bring to a boil until the squash softens. 7. Add the stuffing bread and mix until all the water is incorporated. Add more water if needed.8. Add the cheese if desired and mix well. The mix should hold together well for stuffing. Add water if too dry.9. Split the mix into two and stuff into the squash shells. 10. Bake at 350?F or grill for approximately 30-45 mins until the squash softens a little. It will stay a little more firm than regular squash.
