Stir in yeast and let sit for at least 15 minutes or until mixture is slightly foamy.In a medium bowl, stir together wheat flour, salt, and 1 c. of the white flour. Add the yeast mixture all at once and stir to mix thoroughly. Add the egg whites (they help with texture), and mix thoroughly again.Pour 1 c. of the white flour on a kneading surface, then turn out the soft dough onto the surface. Knead in as much of the remaining flour as necessary to form a soft, elastic dough. Place dough in a bowl you have oiled with a spriz or two of olive oil. Turn, then cover and let rise in a warm place until doubled in bulk.Meanwhile, butter loaf pans. When dough is risen, divide in two, shape, and place in loaf pans. Allow to rise again until the top of the dough is level with the top of the pan. Bake at 425 for 20-25 minutes until loaves are golden brown and sound hollow when tapped on the bottom (remove from pan to test).
