This bread makes 16 hearty sized slices, and could be reconfigured for more slices and lower per serving counts...A mixer with a dough hook or the bowl of a bread machine is a great start for this dough - although it is way too much for a standard bread machine to knead all the way through.Add the yeast, the coffee (hot and strong is best), and 8oz of any beer - the darker the better. to start the sponge. Sift in the whole wheat flour ONLY, allow to mix thoroughly and sit to develop in a warm room for a 1/2 hour. After the sponge has had a chance to develop, add the bread flour and the salt. Knead/Mix the dough into a smooth ball, place in a well oiled bowl and cover. Rise in a warm room until doubled. Fold down, cover and rise until doubled again. Fold down and on a cookie sheet covered with cornmeal or parchment paper, shape into an oblong or round loaf, allow to rise for another 30 minutes. Preheat the oven to 400. Slash the loaf with a serrated blade across the widest part 4 times (very shallow slashes, do not cut allow the way through the dough!).Bake for 30 minutes. Allow to cool completely before cutting.
