4 cups - Whole White Wheat Flour
1 cup - Sprouted Spelt Flour
1 cup - Vital Wheat Gluten
1 Cup - Ground Flaxseed with mixed Berries
1 1/2 Tbsp - Salt

Wet ingredients
1/4 cup warm water
1 packet - Active Dry Yeast
1 tbsp - honey
1 tbsp - Canola Oil

2 1/2 cups warm water


How Do I Make Whole Wheat bread with Spelt and Flax?

Here is how you make Whole Wheat bread with Spelt and Flax:

Proof yeast in 1/4 cup warm water and honey for 10 minutes. Set for for 10 min. If it doesn't expand to double size than the yeast is not active.Add two cups white wheat flour, oil and an additional cup water. Let sit for 20 min.Combine rest of dry ingredients in a large bowl.Mix with yeast mixture adding water as required until dough is stiff, elastic and does not stick to sides of bowl.Flour work surface and knead dough ball for approx. 10 min. Push with palms and pull with fingers folding over as required.Place ball of dough back in bowl and let rise for 1-2 hours.Punch down, remove from bowl and divide into three equal balls.Knead each ball lightly and roll into a flat rectangle about 3/4 the width of the bread pans.Roll each ball and place into lightly oiled bread pan.Split top as desired.Allow to rise an additional hour in bread pans.Bake at 375 degrees F for 30 minutes until top is golden brown and sound is hollow when tapped.Remove from oven and place on cooling racks.Wrap in plastic wrap and place in refrigerator.
