Cut potatoes into chunks leaving skins on. Place in a pot with just enough water to cover. Bring the potatoes to boil for approximately 10-12 minutes. Potatoes should be tender but not mushy. drain and transfer to a large bowl. While potatoes are boiling combine the remaining ingredients and stir together. Pour the 'dressing' over the potatoes and toss to coat.
