Heat over to 300 degrees. Put pumpkin seeds and oil in a bowl, and stir until the seeds are coated. Spread evenly on a lightly oiled or lined baking sheet, and bake for 20 minutes.Transfer the seeds back to a bowl (they might be hot, so be careful - and use something heat resistant!), and stir in the maple syrup, mixing until they are coated.
