1. Soak beans in cold water for 12 hours. Drain before using.2. In a large saucepan, over medium heat, saute olive oil, onion, garlic and celery for approx. 5 mins until onions and celery are translucent. Add beans, tomatoes, stock and water. Add salt and pepper to taste. 3. Increase heat to high and bring to boil.4. Reduce heat to medium-low. Cover pot and simmer for 1 1/2- 2 hours. Stir occasionally.Serving Size:?1 cup
