1 tablespoon olive oil
2 medium onions, large diced
1 large green pepper, large diced
1 large red pepepr, large diced
2 large carrots, diced
3 ears of corn, corn cut off ear, and cobs cut to fit into pot (simmering with soup adds flavor!)
4 cloves of garlic, minced
1 small cayenne pepper, finely chopped (use half a teaspoon or to taste of red pepper flakes if you don't have a pepper... I don't like things too spicy)
1 tbsp Better than Boullion
3 cups diced tomatoes (can use a 15 ounce can too, if you don't have the fortune of yummy fresh tomatoes)
4 boneless, skinless chicken breasts

Here is how you make Southwest Black Bean soup:

I use a large nonstick stockpot with a lid for this... long cooking times mean I don't want to be watching the pot too closely.(prep: chop everything)1. Sautee onions, garlic, peppers, corn kernels, carrots and contents of Bean Cuisine spice pack for a few minutes.2. Add everything else (including corn cobs) and about 2 liters of water. 3. Bring to a boil on high gas, then turn down and simmer for about 2 hours or until beans are soft.4. When soup is done, fish out the chicken breasts and chop them up!If cilantro floats your boat, garnish with some. If you like limes, add some juice and lime wedges when you serve.
