In large stock pot heat Olive oil, add onion and saute until cooked. Add chicken stock and potatoes then bring to a boil, reduce heat and simmer 5 minutes. Add rest of vegetables and return to boil. Reduce heat and simmer until all vegetables are tender. Stir in cream cheese and milk then blend until smooth with a hand blender or in mixer. Return to boil once more and then simmer about 10 more minutes until slightly thickened.
