In a large pot, heat olive oil over medium heat. Brown chicken cubes in oil, then remove and set aside. Sweat carrots, celery, onion and garlic until just tender. Add tomato paste and stir to coat veggies. Deglaze pan with sherry, then add stock. Add chicken, beans and water to desired soup thickness. Bring to boil.
