Small bunch of "Dianosaur" or Russian Red Kale tough stems removed and rolled up (remoulade) and slice really finely. then chop across the threads a couple of times (so the soup isn't a pain in the neck to eat)

2qt 2% milk
1/2 c chopped onion
4 small potatoes (I used purple ones)
2 or 3 Tbsp flour (depending on how thick you like your soup)
1/2 (to saute) and 1 Tbsp oil or butter (just enough to make a roux)
1T curry powder to taste
salt and pepper
