1 cup Acini Di Pepe Pasta (precooked)
2 tbs of Smart balance buttery spread. (I used light)
2 Tbs of flour

Here is how you make Italian Wedding Soup:

Put 2 tbs of smarty balance in large stock pot or pan and allow to melt over medium heat, add vegetables and garlic saute until tender.Sprinkle with flour and mix tll vegetables are slightly coated. Add Broth slowly stirring as you do so this will thicken up the soup slightly. add meat balls and spinach simmer for 15 minutes, reduce to low heat and simmer for 20 minutes. place Acini Di Pepe in bottom of bowl and ladel soup over top.Serving Size: makes 12 1 cup servings with 2 meatballsNumber of Servings: 10Recipe submitted by SparkPeople user IDIGGEEKS.
