Here is how you make Portugese Kale Soup:

In large pot (Kale takes ip lots of room raw) over medium high heat: saute onions in oil, once they begin to turn transluscent, add garlic, stir to heat. Add Sausage, Kale, potatoes, carrots, lentils, and 10 cups of water. Cook on medium uncovered for approximately 45 minutes. Kale will wilt, potatoes and lentils will be soft. Cook this according to texture without letting anything too soft. The Kale takes the longest time to cook. Add Celery salt (or regular salt) to taste. (no need for pepper, the sausage is a bit spicy)Kale is a great vegetable infrequently used, but important here. It has a distinct flavor and makes the soup!
