2 T dried wild mushrooms
1/2 c millet
1 T olive oil
2 onions, finely choped
6 cloves garlic, minced
1 T minced ginger root
1/2 t cracked black peppercorns
2 lbs button mushrooms, thinly sliced
6 c stock
2 bay leaves
1/4 c soy sauce or tamari
cream or plain yogurt, optional
parsley for garnish


How Do I Make Mushroom Soup with Millet?

Here is how you make Mushroom Soup with Millet:

1. In a bowl, combine hot water and dried mushrooms. Let stand for 30 minutes, then strain through a sieve, reserving liquid. Pat mushrooms dry and chop. Set aside.2. In a a large skillet over medium heat, toast millet, stirring, until fragrant and beginning to turn golden, about 3 minutes. Transfer to slow cooker.3. In the same skillet, heat oil over medium heat. Add onions and cook, stirring, until softened, about 3 minutes. Add reserved mushrooms, garlic, ginger root and peppercorns and cook, stirring, about 1 minute. Add reserved mushroom liquid and bring to a boil. Transfer to slow cooker stoneware.4. Add mushrooms, stock, bay leaves,a nd soy sauce. Cover and cook on LOW for 6 to 8 HOURS or on HIGH for 3 to 4 hours, until millet is tender. Discard bay leaves.
