Here is how you make Roasted Asparagus Soup:

Preheat the oven to 375 F degrees. Line a rimmed baking sheet with parchment paper or aluminum foil. (Optional: spray the pan with a good layer of cooking spray.)Take approximately 20-25 spears and cut the tips off and set aside. Cut the remaining asparagus into 1-2 in lengths. In a small sauce pan, add a 3 cups water teaspoon of salt and bring to a boil. Once boiling, drop the spear tips you had set aside in, boil until tender crisp (approx 1 to 1.5 minutes), then drain and shock with ice cold water to stop cooking. Drain and set aside at room temperature, saving for presentation, while you execute the reminder of the instructions.Arrange the chopped asparagus, onion halves and garlic cloves on the baking sheet, (optional: brush with olive oil). Sprinkle with some salt and pepper, and then bake for about 45 minutes. Turn the onions if they start getting overly dark on the bottom. Check on the garlic as well, once the cloves are golden and oozy inside (probably after about 20 minutes), pull them from the oven.Peel the garlic, Then add the asparagus, onions, and garlic into a small pot, and add chicken broth (Optional: Add 1/2 tsp thyme to the mixture).Blend until smooth with Food Processer (you may be able to do it with an immersion blender):A REGULAR BLENDER OR FOOD PROCESSOR:You?ll probably need to do this in batches ? just take a few cups and blend until smooth. Once the soup is pureed, return the soup in the pot to the stove and bring soup to a gentle boil over medium-high heat. Then lower heat to medium, and stir in half and half (Optional: A tbsp of vermouth). Season with additional salt and pepper, and a dash of lemon juice if you?d like.
