Here is how you make Roasted Red Pepper Soup:

Cut red peppers in half and remove seeds. Broil in oven until blackened then place in a ziploc bag until cool. Meanwhile saute chopped onion and minced garlic in margarine. Remove from bag and peel skin off peppers, slice and add to saute mix. Puree all until completely smooth then add to a pot with chicken broth. Bring to a boil and add lemon juice, then simmer for 20 minutes. Add salt and pepper to taste and garnish with basil.Serving Size:?makes 4 1.5 cup servings
