Sautee onion, garlic, celery and carrots in olive oil over med. heat. While cooking remove casing from sausage and roughly chop. Once veggies are softened (about 10 min.) add sausage and cook through. Once cooked add tomatoes, beans (rinsed and drained), and beef stock. Simmer for at least 45 minutes. Salt and pepper to taste.
