1 lb. lean ground beef (can use ground turkey or morningstar veggie crumbles, calorie count will change)
1 head of cabbage cut into small pieces
4 - 8oz. cans tomato sauce
2 cups brown rice
4 cubes beef bouillon
8 cups water
1 tblsp dried parsley flakes
salt and pepper to taste


How Do I Make Un-Stuffed Cabbage Soup?

Here is how you make Un-Stuffed Cabbage Soup:

Cook rice according to package instructions, put in plastic bowl and refridgerate. Cook ground meat in non stick skillet - refridgerate for later. Cut up cabbage and put in crock pot with 8 cups of water and bouillon. Turn to high and let cook for about 12 hours, I do this the night before, letting it cook all night. ( in the morning) Once cabbage is tender, add cooked ground beef, tomato sauce, parsely flakes and salt and pepper. Let this cook for 8 - 10 hours, on low, add cooked rice (just before serving), simmer till hot. When you get home you have a wonderful meal waiting for you. Serves 8, about 2 cups each. We serve this with a green salad and whole wheat bread or roll. Very filling! This also freezes well for a later meal.
