Cut the tomatoes in quarters & cut away the stems from the tomatoes. Seeds can be left in.Melt the Olive oil & butter in a large pan.Fry the onions & Garlic till soft and they have a little colour.Add the tomatoes and tomato paste and stir well.Pour in 1 the vegetable stock and bring the mixture to the boil.Cover the pan and simmer for 30 minutes before removing from the heat.Ladle the mixture into a blender and blend until pureed.Using the ladle, push the mixture through a sieve.Re-heat as required.
