Here is how you make Vegetarian Masaman Curry:

In large skillet over medium heat add oil, swirling to coat the bottom of pan. Add onion, garlic, and tofu and saute until tofu is slightly brown, about 5-7 minutes.Meanwhile combine stock and coconut milk in large saucepan and bring to simmer. Add peanut butter, salt, and pepper and stir until well incorporated. Add carrots and potaotes and simmer until they are almost fully cooked. Add tofu and onion mixture to curry, along with peas.
