Here is how you make Edamame Frittata:

preheat broiler. Heat olive oil in large broilerproof skillet. (I use a cast iron pan). Add edamame, corn and shallots. Cook and stir 6 to 8 minutes or until shallots are brown and edamame is hot.Meanwhile, beat eggs, seasoning, salt, and pepper in medium bowl. Stir in green onions. Pour egg mixture over vegetables in skillet. Sprinkle with cheese. Cook over medium heat 5 to 7 minutes or until eggs are set on bottom, lifting up mixture to allow uncooked portion to flow underneath.Broil 6 inches from heat about 1 miute or until top is puffy and golden.
