How Do I Make Greek frittata?

Here is how you make Greek frittata:

I use a cast iron skillet, you can also use a glass pyrex pan. 9"-12" pan. Make sure you spray the pan prior to adding the egg mixture. Crack your 10 eggs and separate your whites into the mixture. Than add your two whole eggs (yolk too). In a side pan saut? your onions till soft, add mushrooms and than spinach at the last minute. Make sure to fold the spinach over and over until wilted. Do not over saut? the items in the pan, they will cook while in the eggs/oven. Add your milk to the eggs and than your saut? mixture. Whisk well and then pour into your pan. Bake at 350 degrees for 40 minutes or until you can put a knife into the center and pull it out dry.Serving Size: Makes 6 very large pizza style slicesNumber of Servings: 6Recipe submitted by SparkPeople user JENNASKOLNICK.
