1/2 Cup diced red bell peppers
1/4 Cup diced sweet onions
1/3 Cup diced celery stalk
2 Cups of whole grain macaroni or 1 1/2 cups mini spiral pasta
A dash of salt and pepper
1 Tsp. cajon seasoning
1 1/2 Tsp. of favorite herb blend seasoning
1/2 to 1 garlic clove minced
1/2 Cup chopped fresh sweet basil
1/4 Cup chopped fresh parsley
1/2 Cup grated parmeson cheese
1/2 - 1 Cup grated marble cheese

How Do I Make Amy's Veggie Pasta Surprise?

Here is how you make Amy's Veggie Pasta Surprise:

1) Boil pasta until it is tender or fully cooked and drain.2) Mash the tomatoes if you use whole tomatoes. Drain the tomato juices. Combine the sauce, tomatoes and paste in a medium sauce pot. Add the seasonings and heat until the sauce is hot. 3) Saute' the veggies in a pan with a small amount of vegetable or extra virgin olive oil, until the vegetables are tender crisp. Remove from the pan as soon as they are cooked and add them to the sauce with out adding any of the oil.4) Add 1 laddel of sauce to the baking dish and then add half of the pasta. Add enough sauce to completely cover the pasta and then add half of each cheese. Continue this pattern.5) When the layering is complete, then bake in the oven at 375 degrees for 25 - 35 minutes.
