375g whole wheat pasta (rotini, penne, bowties)
3/4 tsp salt for pasta water
3 cups chopped fresh broccoli florets
1/2 cup chopped red bell pepper
1 cup sliced fresh mushrooms
1/2 cup chopped zucchini
3 cloves garlic, mashed
1tsp olive oil
1/2 cup 1% part skim milk
salt & pepper to season
1/4 cup grated parmesan cheese


How Do I Make Whole Wheat Pasta Primavera?

Here is how you make Whole Wheat Pasta Primavera:

Prepare pasta according to package directions, adding 3/4 tsp of the salt to the water.While pasta is boiling, prepare the vegetables, chopped broccoli, mushrooms, peppers and zucchini into small pieces. In a small non-stick pan heat oiive oil. Add peppers and zucchini and saute over medium heat. Add mushrooms and cook until they release their liquid. Add crushed garlic. When pasta is almost done, add broccoli to water for 3 minutes. Drain and return pasta to pot. Keep covered. Add vegetables to pasta and toss. In the same pan melt cream cheese, add milk and parmesan cheese. Add cheese mixtue to pasta and toss to coat. Season with salt & pepper.
