1 small onion--diced or cut in small pieces
1 small green pepper--diced or sliced in small pieces
3 small stalks of celery--cut in small pieces
1 small carrot--diced (more carrots can be added if desired)
1 TBS. olive oil
1 package of "Morning Star Meal Solutions Crumbles"
I can of Tomato soup
1/2 cup of water
1 TBS. Oregano
2 TBS. Basil
8 med. potatoes--peeled and diced
1 cup Milk 2% (Soy can also be used)
1/2 cup of butter (Sub. can be used)
1/2 cup sour cream
1 can of corn--drained (frozen or fresh can be used instead)
1 can of green beans--drained (frozen or fresh can be used)
1 cup Cheese- shredded


How Do I Make Shepard's Pie--Vegetarian style?

Here is how you make Shepard's Pie--Vegetarian style:

In a large frying pan, saute diced onions, sliced peppers, small pieces of carrot and celery with a tbs of olive oil on medium heat. After about 5-10 minutes, when onions start to become transparent, add the "Meal Starter Crumbles." Cook crumbles for 5-10 minutes or until no longer frozen. Preheat oven to 350F.While frying pan mixture is cooking, start a large pot full of boiling water for the potatoes. (Instant potatoes can be used. Follow the directions on the box for these.)Placed the peeled and diced potatoes in the boiling water for cooking. This should take about 20-30minutes.In the meantime, add a can of tomato soup to "meat" pan and a half a can of water. Add basil and Oregano to mixture as well and stir. After mixture starts to boil, set to low and check on mashed potatoes. When potatoes are done, drain water and mash them. Add butter, sour cream and milk to the potatoes and stir well.In a 12x9 casserole dish, pour "meat" mixture evenly on bottom. Then spread a can of corn and green beans in a nice layer. Top with the mashed potatoes and sprinkle with grated cheese.Cook in oven at 350 F for about thirty minutes.
