Here is how you make Vegan Slider Eggplant Burger:

Peel and boil eggplant until it becomes soft, typically for about 10 minutes. Meanwhile, while eggplant is boiling, cup up veggies and place in a large bowl with remaining ingredients. When eggplant is done, completely drain and mash up very well. A potato masher is good for this. Add to bowl with other ingredients mixing well, and refrigerate for about 10-15 minutes. This makes it easier to form patties. Form into slider-sized patties and refrigerate for another 10-15 minutes. If you have a standard cookie cutter, that works perfectly. This helps them hold together better while cooking. Place patties on a seasoned baking pan. Bake for about 25 minutes in a 400 degree preheated oven. Flip over in about 10 minutes.
