4 oz goat cheese (soft or crumbles)


How Do I Make Roasted Veggie Fritatta?

Here is how you make Roasted Veggie Fritatta:

Get a baking sheet and place broccoli, cauliflower and sweet potato cubes on top. Mist with olive oil and sprinkle with sea salt.Heat oven to 400 degrees and place veggies in the oven for 20-30 minutes. Look for edges of the veggies to turn brown.Use a large stainless steel skillet that can transfer from stovetop to oven.On the stove top, heat 1 tbsp of extra virgin olive oil and saute onions for 5 minutes or until soft. Add spinach until wilted.Whisk six eggs in a mixing bowl and set aside.Once roasted veggies are finished, take out of oven and place into skillet with onions and spinach. Reduce oven temperature to 350.Pour eggs into skillet and mix with veggies. Turn stove on medium heat and wait for eggs to become firm on the edges of the pan (about 3-5 minutes). Sprinkle goat cheese crumbles on top of dish before putting the skillet into the oven.Remove skillet from stovetop and place in oven for 30-35 minutes.Enjoy.
