1 Yellow Bell Pepper
1 Orange Bell Pepper
4 Red Bell Peppers
1-2 Tbsp Olive Oil
1 Onion, Diced
2 Carrots, Diced
2 Shallots, Diced
3 Cloves Garlic, Diced
1/2 Cup Vermouth (Sweet Red)
4 Cups (900ml) Chicken/Vegetable Stock
2 Tbsp Honey
1 Tbsp Lemon Juice
1 Tsp Dried Basil/ 1 Tbsp Fresh, Chopped
Salt & Pepper to Taste
Red Pepper Flakes (optional)
1/2 Cup Cream (18% or higher)


How Do I Make Roasted Red Pepper Bisque?

Here is how you make Roasted Red Pepper Bisque:

Makes 8 Servings. (Approx 1 Cup each)Wash and dry peppers and place on baking sheet. Preheat broiler (you can also grill these if easier) and place sheet on rack closest to the broiler. Roast peppers, rotating every 5-6 min until all sides are charred. Immediately place in brown paper bag or put in bowl covered with foil. Leave 15 min.Heat 1 tbsp olive oil in med-large soup pot on medium-high. Add onion, carrots and shallots and allow to saute, stirring often. Add garlic and cook for a few minutes. Add Vermouth and allow alcohol to cook off, approx 5min. Remove from heat and put on lid.Remove peppers from bag/bowl and place on chopping board; Peel all skin off, and remove pits and seeds completely. Roughly chop, then add to pot.Put pot back on over med-high heat. Add chicken stock, honey, salt and pepper, basil, lemon juice and red pepper flakes if using (can also use a splash of hot sauce),Allow to simmer for 8-10min, then turn heat to low.Puree in batches in blender (or with an immersion blender) then return to pot and add cream. Taste and adjust seasonings if needed. Serve hot with a dollop of sour cream of a drizzle of cream on top. Enjoy!*Note: Hot liquids cause blenders to explode! Be very careful.
