(quick soak or overnight whichever you prefer.add finely diced bacon to large, cold dutch oven. turn heat to medium until bacon begins to sizzle, then slighty reduce temp. you want to cook the bacon very slowly so as to render all of the fat. approx. 30 mins. a low temp keeps it from burning. stir frequently.when bacon is done scrape it into a wire mesh strainer and drain over a heat proof bowl to save the drippings. leave the carmelized bits in the bottom of the pan.add two tbsp drippings back to dutch oven. add carrot, celery, onion, salt and pepper. cook approx. 8 mins. add garlic and continue to cook until soft...another two or three minutes.add tomato juice, chicken stock and water. stir to combine.add pre-soaked beans.add remaining ingredients and simmer over low for two to three hours. additional water can be added if it seems to thicken more than you like. once beans are soft add bacon back to pot and simmer another 15 minutes or so. at end of cook time taste and add additional salt as needed. how much you need will depend a lot on the type of bacon you used. start with a tsp and then add in 1/4 tsp increments until you get it like you like it.
